The opening shot comprises the blurry tracking of a video camera until it homes in on its subject – Heather, the director of her own documentary on the Blair Witch. A bare, black-and-white title tells us how three students disappeared and this is what’s left of their footage its presentation and direct language appeal to our sense of truthfulness. His ‘ignorance’ of the camera suggests a life caught on film.Ĭompare this opening to that of The Blair Witch Project. The straightforwardness of the shot seeks to underline the genuine nature of its subject in contrast to the entrances of characters in fictional films. Flaherty follows these titles with a close, frontal shot of Nanook himself he is doing nothing and is facing away from the camera. This affirmation of reality reinforces the following titles on the ‘Barren lands’ of the North and the ‘fearless, lovable, happy-go-lucky Eskimo’, despite their rather fanciful tone. It defines the people within the film as ‘real’, as having a life outside the film, one which they compromised in order for the film to be made. As William Rothman has noted, this caption operates not just as a thank you but as an indirect affirmation of the film’s veracity. Is there not as much falsehood here as in the collaboration between the directors and actors of The Blair Witch Project ? Both projects are ‘hiding’ that falsehood – and with similar strategies.įlaherty’s film opens with a title screen acknowledging ‘the kindliness, faithfulness and patience’ of Nanook and his family in the making of the picture. Thus, the subjects of Flaherty’s documentary were well aware of what he was creating – a spectacle for an intrigued audience – and were engaged as much as he in the ‘construction’ of an Eskimo’s life. ‘Nanook’ himself was constantly advising his director on more exciting material they could film after the success of their walrus hunt, an attack on the lair of a she-bear might thrill their viewers even more. For, despite their portrayal on screen as simple, hardy folk, behind camera, they were busy cutting Flaherty’s film for him. ![]() Instead, the whole documentary was a reconstruction of customs practiced by the Eskimos years before the actual filming, one in which the Eskimos themselves were complicit. For Nanook was not the real name of the protagonist of Flaherty’s film, nor was the life portrayed therein one that was really experienced by that protagonist. It would seem an incongruous pairing if it weren’t for the fact that both are fictions. The second film is one which on first sight would appear to be its polar opposite, The Blair Witch Project, a modern horror movie built up of ‘fake’ documentary fragments. The first is Nanook Of The North, Robert Flaherty’s portrait of the Eskimo people and their struggle to survive in a hostile climate which is generally taken to be the first documentary ever made. One way of answering this question may be to turn it on its head and ask ‘How much can fiction be realistically treated before it stops becoming fiction?’ And as a way of exploring that idea, it’s beneficial to look at two films that have strangely book-ended the life of the documentary so far. The question, then, for the documentarist is how much actuality can be creatively treated before the status of the film as a documentary is called into question. What does that phrase actually mean ? What kind of film is it proposing the filmmaker should produce? Firstly, there is the question of ‘actuality’ how far is that just taken to mean what one sees with one’s eyes – the simple occurrence – and how far is it meant in the ‘philosophical’ sense – the inner reality or essence of an event? Even if one accepts the conclusion that by ‘actuality’, Grierson meant the common sense notion of ‘what is’, then what does he mean by suggesting that that reality be ‘creatively treated’? Surely the more a filmmaker imposes his own creative vision, the more an objective representation of reality is compromised. Grierson’s definition of the documentary as ‘the creative treatment of actuality’ seems to have been a particularly unsuccessful one, considering the amount of frustrated debate it has led to in the decades since. ![]() ![]() Rather than having an overpowering balsamic, you have a smooth, versatile, thick vinegar that works just about anywhere you can think of. The Applejack Vinegar is vastly more syrupy than our other vinegars and can be used the same way an aged balsamic vinegar would be, with one distinct advantage the flavors here are much more complex, pronounced, and versatile. While the yield is minuscule (50 gallons only yields 7.5 gallons of finished vinegar), the result is so worth it. Fun fact: the same principle applies to vinegar - with the acetic acid, residual sugars and aromatics thawing first. The Idea: Applejack is traditionally an American spirit made by freeze-distilling a hard cider basically freezing the liquid and allowing only the first 15-25% of the liquid to thaw, containing the majority of the alcohol. Kitchen Pairings: Drizzle on literally anything (that you intend to eat)īar Pairings: Use this a bit like an apple shrub with bourbon, whiskey, mezcal, tequila, vodka, the list goes on and on. Fresh apple, hard cider, and smokey, applewood flavors. Tasting Notes: Sweet, syrupy like an aged balsamic, but more complex. You can drink this neat or as a replacement for whiskey in traditional cocktails like Manhattans or Old Fashioneds.Flavor Profile: Medium acidity, high sweetness As the applejack is aged it takes on caramel apple notes, resulting in a product that has warm flavors with overtones of baked apple, caramel, and oak. Aging ApplejackĪuthentic applejack is an American tradition, but the aging of applejack brings the flavor profile closer to whiskey.Īt Eight Oaks, we age the applejack in used bourbon barrels. A warming brandy that is by far one of our most versatile spirits. The authentic applejack is bottled at 88 proof or 44% ABV.Īuthentic Applejack has a sweet apple nose and a dry, yet fruity, light to medium body, with a crisp finish. The hard apple cider is run through the still, creating a higher volume alcohol product. Instead of freezing the apple cider, steam distillation heats the cider resulting in evaporation of the alcohol, which is then condensed back into its liquid form.Īt Eight Oaks, we use the same distilling equipment used for our other spirits, including whiskey and bourbon. In modern distilleries, steam distillation is the preferred method. Most distilleries, including Eight Oaks, no longer use the traditional jacking method, but instead use the same distillation methods that are used for other spirits. However, this process was inefficient since it could only take place during the cold, winter months. The more ice that was removed, the higher the alcohol content–which made Applejack much stronger than hard cider. This jacking process came about when the early settlers left their cider out in the cold and then removed chunks of the ice from the spirit. This process involves freezing the hard cider mixture and removing the ice (frozen water), which increases the alcohol content. Applejack gets its name from the traditional method of jacking (or freeze distillation). Traditional Method of Making ApplejackĪfter the fermentation of apple cider is complete, the hard apple cider must go through distillation. No neutral spirits or anything else is added to the final product. Fermentation takes anywhere from six to eight days, at which point, the apple cider is transformed into hard apple cider. Yeast is added to the apple cider to begin the fermentation process. The cider is pure apples: no additives, preservatives or pasteurization. At Eight Oaks we use local pressed apple cider from Hardball Cider in Mt. ![]() ![]() ![]() You have to believe in love stories and prince charmings and happily ever after. However, Taylor confirmed James' gender while explaining the song on country radio: Interestingly, James' gender is never explicitly stated-James and Inez (mentioned in the pre-chorus) are, in fact, the names of Blake Lively and Ryan Reynolds‘ eldest daughters-leading some to believe that James could be a girl and that the Teenage Love Triangle is, in fact, a sapphic love story. The storyline is preceded by “cardigan” and “august.” “betty” is believed to be the third part of folklore’s “Teenage Love Triangle,” told from the point of view of James. Sonically, the song exudes a strong sense of nostalgia, delivering production and instrumentals reminiscent to Taylor’s earlier projects like Fearless and Speak Now, both of which were records written by Taylor in her similarly naïve adolescence. The song takes a more feminist approach, portraying the narrator as a person named James who can’t own up to their mistakes, all while Betty flourishes on her own and recognizes her worth. Listeners learn that while the summer affair was going on, the speaker, James, was still dating their classmate, Betty. “betty” touches on the aftermath of “august,” which describes a summer love that was doomed from the start. ![]() ![]() ![]() Granted, if you are someone who calls a lot of people, it could definitely be beneficial to keep that Calls list for when you are in an undisturbed area and in calling mode. ContextsĬontexts are defined as being the constraints put on us in different ways. When handling the particular action, it can simply be deferred if I have already been in contact with the person recently, or make sure something happens by creating an action or contacting him/her directly. This means that every once in a while, an action will pop up with a name in my short dashes context, telling me to reconnect with the person in question. I have a special single-action project under my Friends & Family area called TLC, which have repeating actions for each person I want to keep in touch with but won’t necessarily do on a regular basis without a gentle reminder once a month or so. It doesn't matter if it ends up being uncategorized for a while as long as I give the project a verbose description, since I know it will end up in the proper folder at least during the weekly review. When processing something in the Inbox and realizing it should be part of a new project, I simply type the project name into the project field and press cmd+enter to create it at the bottom of the projects list. I have noticed a cognitive overhead having to think about filing each time a new project is added, which is why I simply refrain from doing that. Adding Projectsĭuring my weekly review, which I will discuss in detail later, I make sure to file projects under their respective area of responsibility. For your situation, professional areas could instead include "Development", "Infrastructure", "Support", or maybe only having "Current Clients" if you are managing a lot of customers and their respective actions. It all depends on your roles, so these examples should be seen as guidelines. Professional areas of responsibility could include: For my personal role, some of the areas can include: The next level within these role folders contain areas of responsibility for the particular role. Instead of letting work be defined by others, you are defining your work to be aligned with your goals. This is where you start to define goals and pave a path ahead. The last part is about looking upwards and onwards to the bigger things than the daily grind of going from task to task. The second part is the implementation step where the author David Allen guides you through the big task of setting up your own GTD system from scratch. The book is fairly short and is divided up into three parts, where the first is mostly about the underlying theory and why it works. If you are not already familiar with the Getting Things Done methodology, I strongly suggest that you to read the book before implementing the things I mention here. Since my GTD setup is an ever evolving organism, this can only be seen as snapshot in time for when this article is written, and the real changes will be visible when I write the 2017 edition of this very post and highlight the differences.
